The 30-month Parmigiano Reggiano features an aroma of dried fruit, broth, and spices (such as nutmeg). The flakes are soluble, very crumbly, and dry. It is a cheese particularly suited for main courses, but it is also ideal with carpaccios (both meat and fish) or on roast beef.
