18-month aged Parmigiano Reggiano has a delicate taste that still features milky notes, enriched with hints of flowers, fresh fruit, dried fruit, pastries, and spices. It pairs well with young wines, light-bodied, preferably sparkling and rosé. Tyrosine crystals begin to appear due to the aging process.
