The 55-month Parmigiano is a special cheese. Its main feature? High digestibility and extraordinary content of proteins, vitamins, and minerals, making it particularly suitable for the diet of infants, children and elderly and those who engage in sports at all levels. With an intense straw-yellow color, it reveals on the palate a more pronounced taste compared to lower aging. The aromas are of milk, butter, cooked vegetables, aromatic herbs, spicy and toasted notes. Ideal paired with dried fruits, honey with complex aromas and jams of figs or onion, pears and walnuts. It is excellent grated on first courses or in stuffed pasta, typical of our great culinary tradition, accompanied by structured red wines or “Pale Ale” style beers.
