To ensure the excellence of our cheese wheels, we meticulously oversee every phase of Parmigiano Reggiano production.

We exclusively use milk from our family-run farms, located within 10 km of the dairy: a sustainable choice that preserves the quality and freshness of the cheese, as well as the environment and territory. We pay great attention to cow welfare: we provide extensive grazing areas, grow our own fodder and rely on expert veterinarians to evaluate the dosage, composition, and frequency of meals.

Processing and aging take place in controlled environments, with suitable temperatures and the highest hygiene standards.

We have implemented a system of risk analysis, critical control points (HACCP) and Good Manufacturing Practices (GMP) in compliance with EC Regulations No. 852/2004, 853/2004, and 178/2002, to ensure the safety and traceability of Parmigiano Reggiano. Furthermore, the entire facility is certified according to voluntary GSFS (BRC) standards and animal welfare supply chain.

From the young, delicate and elastic 12-month wheels to the more aromatic, rich and persistent 60-month varieties: our Parmigiano Reggiano can be enjoyed on its own or as the perfect accompaniment to aperitifs, appetizers, first courses, main dishes, fruit, and desserts.

Parmigiano Reggiano 12 months

The 12-month Parmigiano Reggiano, naturally aged for at least 12 months, is a young and delicate option, suitable even for the most sensitive palates. It features a light and uniform straw-yellow color, with pleasant and harmonious lactic aromas, enriched by notes of flowers, fresh fruit, dried fruit, and spices, along with subtle hints of pastry.

It pairs excellently with sparkling or medium-bodied red wines, as well as IPA-style beers. In cooking, it lends itself to multiple uses: grated on pasta dishes, shaved over carpaccio and salads, or as a starring ingredient in eggplant parmesan, eggs with black truffle, and complex recipes.

Parmigiano Reggiano 18 months

Aged for at least 18 months, our 18-month Parmigiano Reggiano offers a perfect balance between savory and sweet. The slightly complex aroma anticipates the more evolved nuances of longer aging periods.

It excellently complements sparkling or rosé wines and pairs well with pasta dishes, appetizers, salads, and light main courses.

Parmigiano Reggiano 24 months

After two years of slow and natural maturation, our 24-month Parmigiano Reggiano is perfect for anyone seeking a versatile product to enjoy at any time of day.

The texture, granular and crumbly, is distinguished by its balanced flavor, full and persistent. The cheese can be enjoyed on its own, paired with seasonal fruit, or as an ingredient in traditional recipes and red or white meat dishes. It excels with both sparkling wines and structured yet fresh red wines.

Parmigiano Reggiano 30 months

Intense, crumbly and highly digestible, 30-month Parmigiano Reggiano Parma2064 has a distinctive aroma of dried fruit, meat broth, and delicate spices like nutmeg. It is particularly suitable for accompanying main courses, carpaccio of meat and fish, and roast beef. Moreover, it is excellent with medium-bodied red wines and craft beers with a bold character, which it enhances without overpowering.

Parmigiano Reggiano 55 months

The pinnacle of cheese-making art, 55-month Parmigiano Reggiano is a rarity with intense amber tones, distinguished by prominent tyrosine crystals and a highly granular and crumbly texture. Its aromas are extraordinarily complex: dried fruits, walnuts, hazelnuts, spices, and meat broth merge into a bouquet of persistent fragrances, while the flavor is simultaneously sweet, savory, and slightly spicy, with a long, enveloping finish.

This product is designed for gourmet consumption, with fresh fruit, honey, and premium preserves, or as an exclusive ingredient in refined and elaborate dishes. It can be paired with structured wines, dessert wines, or spirits capable of enhancing its deep notes without masking its complexity.
